BMJ:精制谷物可增加患心脏病与早逝风险!

一项新研究发现,食用大量精制谷物(例如羊角面包和白面包)与罹患重大心血管疾病,中风以及早逝有密切关联。

谷物可分为二类:精制谷物和全谷物。全谷物是植物的整个种子,组成部分有麸皮、胚芽和胚乳。精制谷物是不完整的全谷物,它不同时含有全谷物种子的三个重要组成部分,精制谷物去除了全谷物中大约四分之一的蛋白质,以及一半以上的营养成份 

以往的研究证实,全谷物含有丰富的蛋白质,纤维,维生素B,抗氧化剂和微量矿物质(铁,锌,铜和镁)等营养物质。饮食结构里含有丰富的全谷物可以降低患心脏病,2型糖尿病,肥胖和癌症的风险,使用全谷物还可以帮助维持肠道排便并促进结肠中健康细菌的生长来改善肠道健康。

近日,加拿大西蒙弗雷泽大学健康科学学院的一个研究小组在British Medical Journal上发表题为《Associations of cereal grains intake with cardiovascular disease and mortality across 21 countries in Prospective Urban and Rural Epidemiology study: prospective cohort study的研究论文。

该研究指出每天食用大量精制谷物(例如牛角面包和白面包)与罹患重大心血管疾病,中风和早逝的风险更高

研究人员在对包括加拿大在内的21个国家和地区的137,130参与者进行了长达16年的数据追踪。

精制谷物高摄入量地区和低摄入量地区,摄入量与临床疾病之间的关联

数据分析结果显示,多年来,居民饮食中精制谷物和添加糖的摄入量已大大增加,每天食用七份以上的精制谷物会使早期死亡的风险增加27%,心脏病的风险增加33%,中风的风险增加47,食用全谷物则未发现明显的不利健康影响。

精制谷物与全谷物的摄入与临床疾病之间的关联

该项目的研究人员之一Scott Lear教授表示:这项研究再次证实过度加工的食品应该得到限制。总而言之,增加糙米和大麦等全谷物食品的比例,减少精制谷物产品的用量是实现健康饮食的关键
